Na What?

NDUJA! A soft spreadable salami that has been quite the hot thing lately. Made popular in San Francisco recently by Chef Chris Cosentino who's making it at his salumaria, Boccalone. I love the stuff. Over crackers. With some scrambled eggs. About a billion other ways. Good in so many things. Two of my favorite dishes in San Francisco right now?

Sardines and nduja at Incanto:

And a farm egg over some nduja at Perbacco:

Really. Both dishes are SO good. Go check these dishes out people. They're amazing.
